Enjoy the moment – ​​sip by sip

Our original recipe for Indian chai:

Ingredients for 1 liter:

• 1/4 liter milk
• 3/4 liter water
• 2 tablespoons fresh ginger, finely grated
• 10-15 cardamom capsules, crushed in a mortar
• 1 pinch Chai Masala spice mix
• Strong black tea (e.g. Lipton's PG Tips)
• Sugar or honey to taste

Preparation time: about 15-20 minutes

Preparation:

1. Bring milk and water to a boil in a saucepan.
2. Add the fresh ginger.
   NOTE: Only add ginger when the liquid is boiling, otherwise the milk may coagulate!
3. Add crushed cardamom and chai masala. Let it simmer for 5-10 minutes.
4. Add 2-3 teaspoons of black tea and boil over high heat for 3 minutes.
5. Strain the mixture through a tea strainer.

The perfect chai experience:

A good chai should be enjoyed fresh – after just one hour in a thermos, it loses its flavour. Traditionally, chai is drunk sweet – in India, chai is often made as a saturated sugar solution.

Crushed cardamom quickly loses its aroma, so it is best to crush the capsules fresh in a mortar. Chai does not lend itself to refined, subtle or flavoured teas – the best results are achieved with strong, small-leaf teas such as "Dust Tea" or a strong breakfast blend (Assam or Ceylon).
